Native to: China, India
Other producers: Nepal, Nigeria, Thailand
Usage: Flavouring, Medicine
Food partners: beef, poultry, fish, seafood,
vegetables (aubergines, cabbage, potatoes)
fruits (melon, pineapple, rhubarb, plums, apples, pears)
Culinary uses: gives a hot, tangy flavour. Also has a bite to it.
Excellent for teas, masalas, masala chai, soups, marinades or dipping sauce.
Good to know: It neutralises fishy and meaty smells.
